Yes, in principle this could be done with the app. In any case, I can successfully test authentication via https://www.mobileid.ch/. But when I log in to Swisscom, I can’t choose whether I want to log in using a SIM card or an app. The SIM card is always searched. I don’t know that I could set this up anywhere.
Anyone who can use a Mobile ID-capable SIM card should stay away from the “Mobile ID app” for security reasons!
With the “Mobile ID App” you lose the security advantages of the “Mobile ID”-enabled SIM card. The “Mobile ID” capable SIM card is a HSM.

The “Mobile ID App” cannot offer the security advantages of an HSM. The “Mobile ID App” was developed by Swisscom for customers abroad who do not want to, cannot or are not allowed to use SIM cards from Swiss mobile phone providers.

To support Mobile ID-enabled SIM cards, the cell phone must only support SIM toolkits. See post #2.
I don’t know if the eSIM is also an HSM with a trust rating of EAL4 or higher. That’s why I cannot recommend using Mobile ID on an eSIM!
