The display name in Gmail is the name that is displayed to recipients of your messages. You can change your display name by:
opening Gmail on your computer
clicking on “Settings” in the top right-hand corner
click on the Accounts & Import or Accounts tab
click on “Edit address” under "Send as
enter the name that should be displayed to the recipients of your messages
click on Save changes at the bottom

Yes, I did see that. Here (where the arrow is) I’ve entered a new simplified address with initials only.
But above the address is still my first and last name. And that can’t be removed.

To put it simply: when you click on the link, Gmail connects to your account using a cookie (containing your unique login details) that is only on your computer and is personal to you.
Anyone else who clicks on the link will find themselves either on their personal account (thanks to the personal cookie on their computer) or on the Gmail login page, but never on your account.
