Emails older than 30 days (the date the email was sent) are automatically deleted from the Trash.
To prevent this, you should create folders in webmail that correspond to the available storage space, otherwise use an external email program such as Thunderbird (free) or Outlook (paid).

It’s about the core question: how many days are messages visible in the trash can? Deriving from this, why do I see 7 and not 30 days.

Your Apple devices may automatically delete the emails earlier than the 30 days that Bluewin grants you. The setting for this is maximally hidden:
Take a look under Settings -> Mail -> Accounts -> [Account name] -> Account -> Advanced -> Remove deleted emails
Maybe you’ll find what you’re looking for there. This would probably have to be configured separately on all your Apple devices.
